The Famous California Roll

California rolls are, of course, a favorite at most Japanese restaurants in Seattle. These inside-out maki-zushi typically contain avocado and cucumber (and often crab or imitation crab) with a dusting of roe or sesame seeds. As its appellation suggests, the California roll originated in its namesake state some thirty or forty years ago, but has spread worldwide, becoming an early and wildly popular example of what we now term “fusion” cuisine. From the Golden State to farther-flung corners of the sushisphere, variations on the California roll abound, each one incorporating various local influences. So next time you visit our Seattle Japanese restaurant, be sure to sample our fresh take on this modern classic!
